  1. RELLENO DE LASAÑA:
    Se pica la 1/2 cebolla y los 3 ajos finamente.
    Se pica en cuadritos la zanahoria (pelada), calabacitas y chayotes (pelado y descorazonado)
  2. Los jitomates se ponen a hervir en agua hasta que la piel esté suave.
    Una vez cocidos se licúan con las rodajas de cebolla y diente de ajo, no se le pone agua para que salga espesa la salsa de tomate.
  3. En una cacerola se pone un poco de aceite, se agrega la cebolla y ajo picado, se deja acitronar, después se agrega la carne y se sazona con sal, se voltea durante unos 5 min, después se agregan las verduras picadas y la salsa de tomate, se agrega más sal, las hojas de laurel y un poco de pimienta molida. Se tapa la cacerola para que todo se cueza con su propio jugo, se va volteando cada 3 min para que todo se cueza igual, después de 10 min, se destapa para que se consuma el jugo.
  4. COCCIÓN DE PASTA:
    En una cacerola grande se pone a calentar agua con un poco de sal, una vez caliente se comienzan a agregar de una en una las tiras de pasta para lasaña, se deja hervir por 5 min hasta que la pasta esté suave, se pueden dejar en el agua para que la pasta no se pegue.
  5. SALSA BECHAMEL:
    Se pone a calentar la leche.
    En una cacerola se agrega la mantequilla, una vez ya derretida se agrega la harina, con un batidor de bola se mueve hasta que quede bien integrado, se deja hervir por 5 min sin dejar de mover.
  6. Se comienza a agregar la leche ya bien caliente para evitar que se hagan grumos, se deberá agregar en 3 tantos, no se debe dejar de mover, se agrega sal al gusto, pimienta molida y la hoja de laurel, se mueve hasta que quede todo buen integrado y se reserva.
  7. MONTAJE DE LASAÑA:
    En un refractario o molde hondo se agrega en el siguiente orden las preparaciones hechas anteriormente:
    1. Salsa bechamel
    2. Pasta de lasaña
    3. Queso Mozzarella
    4. Relleno
    En la capa final de pasta se debe poner todo el queso cubriendo perfectamente toda la pasta.
    Se debe cubrir con papel aluminio.
  8. El horno ya precalentado a 180ºc, se mete la lasaña por 30 min.
    Una vez pasado el tiempo se debe dejar en el horno apagado por otros 15 min para que toda la preparación se asiente.
  9. Para la presentación de la lasaña se pone encima de la porción una hoja de albahaca.
